In my kitchen, from-scratch cooking means taking time to build flavor with care. I often draw inspiration directly from residents. That may mean reviving a cherished dinner party recipe, tending a roux until it reaches proper depth, or revisiting a 1965 cookbook to reconnect with familiar techniques.
Cooking this way requires patience and attention. I do not rush sauces or rely on shortcuts. Instead, I layer aromatics, control heat carefully, and taste continuously until balance develops.
Fresh ingredients support resident health while elevating quality of life. By limiting additives and focusing on whole foods, we provide more complete nutrition. Residents benefit from improved energy and sharper focus. A hot, freshly prepared meal also creates anticipation and comfort, which positively shapes their day.
I adapt each menu through careful ingredient selection and thoughtful substitution. Sodium reduction remains a priority. Instead of relying on salt, I build bold flavor using salt-free blends from Spiceology and layered aromatics.
Vegetable preparation also matters. Overcooked vegetables lose flavor and appeal. I cook them with intention to preserve texture and color. When food looks vibrant and tastes balanced, residents naturally engage with healthier options.
Comfort foods remain essential. I balance them with fresh vegetables and lighter preparations. Respect for ingredients and careful technique allow both nutrition and satisfaction to coexist.
Our Candlelight steak dinner stands out as a recent success. I selected Certified Angus Beef Prime sirloin and broke it down into picanha, baseball cuts, two-thirds cuts, and mouse muscle. Each cut showcased distinct texture and character.
We paired the steak with pommes aligoté using a precise 3:1:1:1 ratio of Yukon Gold potatoes, unsalted butter, heavy cream, and cheddar cheese. The result delivered a smooth, elastic texture that gently fell from the spatula.
For the vegetable, I prepared asparagus Provençal. Instead of olive oil, I used rendered beef tallow from the steak trim to deepen flavor.
To complete the plate, I created a quick semi-glace from the remaining trim and mirepoix. I roasted it with tomato paste, deglazed with red wine, and simmered it into stock for four hours. After straining twice and chilling to remove impurities, I reduced it to a nappé consistency. At service, I emulsified it with cold butter to achieve sheen and richness.
